Queen Of Sheba Salad
Summertime... it is so lush and so fleeting isn't it ?.... I just love all my flowers and the abundance from the garden this time of year.... Clearly the Queen of summertime salads is the Sheba.
First created during a women's sacred dance retreat on the island of Kaua'i that I was the cheffini for - during our elemental Padma day, when we all wore red and danced red Tara dances, and thought about how passion + emotions and feelings pervade our lives... it's just a sexy beast of a meal and a total showstopper at a summer gathering.
Ingredients:
Beets! fresh, organic is best all colors and kinds, peeled and cooled, cut into bite size chunks.
Tomatoes ! either cherry or chopped but again bite sized
Berries ! can be raspberries, blueberries, cherries ( pitted),and strawberries, etc ( pomegranate seeds are great as well)
Red onion sliced thin
Balsamic Vin
Sesame oil and or olive oil or a bit of both
Thai sweet chili sauce
red Hawaiian alaea salt or pink Himalayan
a dash of red pepper
BOOM. Blend with your hands.
CHILL. Serve.
